How to sell ice cream in winter
This is the problem facing Rays ice Cream each year as Summer comes to an end. What to do? Close and go on holiday? If only that were an option, maybe one day! In the meantime, the sales may slump but the bills don't go anywhere: there's rent still to pay; staff need their wages; insurance isn't seasonal; the electric meters keep on ticking- the list goes on.
So, what's the answer? Rays Ice Cream have looked for several ways to diversify over the years to try and keep some sales coming over the winter. Everyone knows about the home made ice cream that they are famous for and their loyal fans will enjoy this year round. For the less die-hard ice cream fans they also sell Carwardine's Fairtrade coffee, home made waffles, cakes and brownies, ice cream cakes and cheesecakes.
At this time of year they try and maximise their festive sales by making Christmas pudding, mince pie, reindeer poo, Baileys and other seasonal ice creams as well as some special sorbets including gin & tonic and mulled wine flavours. They also mould these home made ice creams into festively decorated ice cream cakes. More recently they have begun to expand the wholesale side of their business by supplying their home made ice cream to local quality food businesses.
