Lentil Bolognaise
It's easy enough being vegan when you're out for meals - especially with the increase of vegan menus. But creating your own vegan dish at home can be more difficult...which is why Urban Green Cuisine have shared their delicious Lentil Bolognaise recipe with us - 100% vegan!
Ingredients:
- 1 garlic clove, chopped
- 1 onion, chopped
- 2 tbsp. vegetable bouillon
- 100g Green Lentils, cooked
- 1 tin chopped tomatoes + I tin water
- 1 carrot grated
- 200g mushrooms, grated
- 1tbsp tomato puree
- 1 tsp Basil
- ½ tsp chilli
- Salt and Pepper to taste
Method
1. Sauté the onions, grated carrot, mushrooms, garlic, veg bouillon and chilli once softened add the add the tomatoes and water.
2. Add in the Green lentils and cook through.
3. Taste and add tomato puree and Salt and pepper to taste.
As alternative to pasta, serve with a roasted mini squash.
