Haven’t got time? I hear you! I too find myself having limited time to grab lunch either at my desk or on route in my car. We lead busy lives. However, I promise there is a simple solution…
It’s all in the prep!
You can make time. Sunday’s are usually lazy days, so why not use an hour to make five lunches… Pop on your music, grab your ingredients and get chopping! Making time for this on Sunday gives you more time in the week after work to relax and unwind, rather than worrying about pulling a lunch together just after you’ve eaten dinner.
If you prep your lunches, not only can you make exciting choices but healthier and money saving ones too! So, how do I make the perfect lunchtime taste sensation, I hear you ask.
5 simple steps…
- Pick a carb - quinoa, brown rice or pasta, buckwheat or couscous. Measure out 5 portions - I tend to plump for 60g and cook as instructed. Rinse through with cold water and split into 5 tubs
- Pick your veggies – I go for 3: my personal favourite is cherry tomatoes, chopped raw asparagus and chopped spinach. Chop up 5 portions and add to the tubs
- Pick your Protein source – chickpeas, black beans, Feta, tofu, Eggs… Choose and vary your options! Chop and add to your tubs
- A bit on the side – chickpea hummus (see recipe here) or avocado are great healthy-fat sources. Add to your tubs on the side
- Dressing – Simple squeeze of lemon mixed with chopped herbs such as mint or dill is amazing and easy! You can add a splash of virgin olive oil if you prefer. If you’re feeling really fancy, you can add an extra level of pizazz – some toasted sunflower seeds add omega and a crunchy sensation!
Now all you have to do is pop on your lids and put your tubs in the fridge. Meal prep done – just remember to grab a box and a fork and spoon!
Think of the time you will get back to fully enjoy your lunch hour – no need to dash to a shop to grab what is left on the shelf! You’ve got your own healthy, delicious and nutritious lunch waiting for you in the fridge.
