Recipe: Warming Winter Squash Salad
This Warming Winter Squash Salad recipe from Urban Green Cuisine is the perfect meal to warm your cockles on a wintry day. It's also suitable for vegans!
Ingredients:
- ½ roasted small squash
- 180g chestnut mushrooms
- 2 roasted carrots
- 1 roasted onion
- 1 garlic clove, chopped
- 10g chopped thyme
- 100g of blanched kale
- 150g Tofu
Optional Dressing:
- 2 tbsp. Virgin olive oil
- 1 Lemon zest and juice
- 10g Thyme, chopped
- 10g Salt and pepper
Instructions:
1. Stir fry the onions and garlic, add the rest of the ingredients until heated through except the tofu
2. Fry off the tofu in a teaspoon of nut oil quickly on a high heat and serve with the stir fry vegetable
