Recipe: Tomato White Bean Soup

With the help of the brand new, more powerful NutriBullet RX, you can warm up this season with it's tasty winter recipe! Nutritious and filling this white bean soup is sure to be a favourite this Christmas.

To make this tasty treat you will need:

1 Onion, chopped
1 Clove Garlic, minced
2 Tablespoons Olive Oil
425g White Beans
3 Tomatoes
1 Sage Leaf
¼ Cup Basil
¼ Cup Cashews
470ml Vegetable Stock

In a medium frying pan, heat olive oil. Add onions and sauté for 5 minutes, until soft and translucent. Add garlic and sauté for an additional 30 seconds. Remove from heat and let cool.
Add onion and garlic to NutriBullet Rx SouperBlast Pitcher. Add all other ingredients. Extract on 7-Minute Heated Cycle.
Serve with toasted bread or salad on the side!

For a creamier soup, mix in 1/2 cup whipping cream just before serving.     

Don't have an Rx? Follow the same steps, but extract in your original NutriBullet or NutriBullet PRO and heat over the stove for about 7 minutes, or until warmed through.
